I added a touch spell to attack animation and used the regular "shockbite" touch spell in the CS.
Maybe I can create a new spell with custom (no) particles?

I don't think so. I think its hard coded to show casting animation effects when spells are cast by creatures and NPCs.
You've probably already gone down this avenue, having gotten your answer, but have you investigated adding the spell effect via script? That might require MWSE to work on targets other than the player... there may be a better solution.
