i was wondering if summoned weapons and armor are only deadric or if say you had a staff or a sword and and enchanted it could you summon that staff or sword or would it only ever be deadric?

As far as I know, Daedric armour contains an actual daedric spirit, so summoning it works just the same as summoning an ordinary daedroth. I don't think it has to be crafted in the Dremora style seen in-game. Anything in Oblivion containing a daedric spirit can probably be summoned with a similar spell.

As for summoning non-daedric items, it's almost certainly possible to create a spell/enchantment that instantly transports a specific item to you, although that is more likely to be considered a Mysticism (or Alteration after Mysticism was removed) spell rather than Conjuration. :)

Bound Weapons/armor as we know them are Daedric in appearance because they're essentially Daedra taking on the form of a weapon, or armor. Naturally, they'd choose to manifest themselves as Daedric-styled weapons. While most summoning is based on summoning things from Oblivion, there's no reason to believe that's the only way things can be summoned. The Redguards used to be able to summon swords from their own spiritual energies, especially in times of need; sword-singing it was called, although it's a forgotten art nowadays.

ok cool cause i was thinking about making an tes story where the main character was a mage but was good at using swords and staffs. and also would summon some armor that he had made and enchanted him self. so basically he would walk around in normal cloths but when the need arised he would summon his armor and weapons. or say he went from a hot place into a cold place he could summon some warm cloths or armor. so he would pretty much not have to carry any thing except say potions money or books.
