Okay, so I know I am totally geeking out here. The other night I had a dream in which I was spelunking in one of Skyrim's many caves looking for some MacGuffin.
Anyhow, I turned the corner and I ran into a Super Mutant from Fallout 3. Now that got me thinking, how bad ass would that be. I know pc modders could have a field day doing this.
Copyright issues aside how @!#!@# cool is that. I am sad, alas as I play on a 360 and I am not holding my breath for mods on the consoles...

plus the closest easter eggs id say would go with TES would be a nord named grognak the barbarian, or some named orc with a warhammer as a super mutant referance
