In reply to the topic, I doubt you will be able to build a log cabin wherever you want because it just doesn't seem like an elder scrolls thing not to say it shouldn't be. Furthermore an adventurer probably wouldn't know how to build a log cabin and therefore you would need to contract someone to do it and they would probably have their own materials.

You could build your own place in Morrowind by ranking up with the greathouses. However, the plot was predetermined.
