I use one of those that are available in Francesco's Overhaul Mod, where 1 hour in real life lasts 16 hours in game. I find it the most appropriate because I walk most of the time, explore locations slowly and generally don't rush with playing. I like days to last long but not too long.

Depends on how slow you want it. A timescale set to 1 would make in game time as slow as time in the real world. 30 is the default timescale, so you can experiment with different settings to see what speed is best for you. Just remember that changing the timescale can cause bugs in some quests, but you can fix those by setting the scale back to the default 30.
