The Elder Scrolls are not the basis of the prophecy concerning Alduin, though they probably do chronicle them. Alduin's Wall is, to our knowledge, the main source of the prophecy, or at least a depiction of the prophecy made by those who knew of or were the source, not the Elder Scrolls themselves.
And I think I can say this relative safety because if it was the Elder Scrolls that were culminating to this final event, I highly doubt that the Empire would have fell as it did. After all, they are, or were, in control of the Elder Scrolls. Whereas Alduin's Wall is likely in some cave somewhere or hidden in High Hrothgar where the Empire probably would not look for a divination of its fate.
Now, as far as what Martin said, I do not believe it should be taken literally. I believe that it was more him talking to the player rather than your character, as we the players do technically write the Elder Scrolls with every action we make. As in, we make our own fates, which is related to us being able to do whatever we want.
We can also just assume that the Heroes of each game eventually, during their inevitable fall into obscurity and assuming they don't die, probably become monks after we the players relinquish our hold on them.
