Do you have blender or 3ds max?!
I have no all in one tutorial for Morrowind animation. All I know about it is from several bits of information which I had to puzzle together and from hours and hours trial and error and of course A1x2e3l and the guys from niftools helped me much. I'd advice you to learn basic keyframe animation first, there are some video tutorials about this on http://www.youtube.com and maybe also on http://www.vimeo.com Most video tutorials are pretty easy to follow, cause they were made by young people. A very good side with a lot of quality tutorials is also http://http://walkercreations.org/blender.html#Neal%20Hirsig%20Video%20Tutorials , isn't the name of this side lovely?!

Just try to make simple exercises, take a cube and move it around, rotate it, scale it and so on. Then export and check ingame. Next make a more complex animation, export, check ingame. Then maybe try out shapekey animation, take a cube and let it morph into a sphere. Next model a face which smiles and let it morph into an angry face.
If you feel familiar with that, you may try to rig a character and animate its bones. This is the most difficult part in animation, because you have to learn a lot about biomechanics, walkcycles and so on. Check out the "Gingerbread man tutorial" and similar, they are for older versions of blender, but you get a good overview of what character animation is about. If you have managed that, then you can try to make complex animations for Morrowind. Combining rigged charakters with with shapekey and keyframe animation. This is where the fun begins, but it is also very painful, cause you'll get a gazillion of unspecified export errors or animation group errors ingame and so on. If I didn't scare you off, then hurry up and practice!!!
