I'm stuck behind the bed behind Madanach. I thought it might be a good place to level my sneak perk. I've saved enough while sneaking as not to loose progress that my last save before is 8 days ago.

Do I have an option besides quitting loosing 8 days of progress? Playing on Xbox One

Can you sleep in the bed? And isn't there an autosave from when you entered the zone?

Drop an item and hope it falls within reach. Pick it up, and try and line it in above a weak point in the stuff you're caught on and use Whirlwind Sprint. With some luck, it'll carry you out.

If you're on PC bring up the console and type TCL, then press enter. This will toggle no clipping mode. Just don't forget to type it in again after you've freed your character. Also make sure you're not referencing anything while you have the console commands open.
