Like it's said, the "conflict" with LGNPC is very minor. An NPC might say "My brother is right next to me" while he's standing alone in his room with nobody around.
You can somewhat shop at night. If you manage to find a merchant that goes to a tavern at night, you can sell stuff to him. However, he won't have his merchandise for sell nearby so you can't really buy anything.
Generally NPCs' schedules make sense. Most Dunmers go to the nearest Temple late afternoon, most people go to a tavern at night, factions members often hang out with their fellow faction comrades (ie in Balmora, there's a big Hlaalu dinner each night at Nerano Manor).
If you use a head replacer that gives unique heads to each NPCs, remember your questgivers' face!
The biggest draw backs is that sleeping illegally in someone's bed is much harder, sometimes you rent a room in an inn and there's some creepy NPC standing in your room all night, and doing the Morag Tong quests is much harder, because your target might be surrounded by people who will not stand back and mind their business, they'll jump in the fight to defend your target.
