I downloaded the free version of Daggerfall some months back and promptly changed the controls. The problem is, I haven't played it in many months and forgot all the controls. I cannot seem to pull up the controls list as when I hit [esc] it pulls up the main menu, but I cannot select anything (my mouse doesn't seem to be working either). I'd rather continue the game from where I left off, rather than going through the first dungeon, but is that my only option?

If it's really that screwed up just copy the savegame folders from wherever you installed the game, reinstall and then copy them back. Should work. I've never seen the game display the main menu instead of the options when prettying ESC.

Perhaps I wrote that wrong. It's not the main menu that you see when you first start the game, but it's the one that has Save, Load Game, Exit Game, Sound, Music, Detail, Full Screen, Head Bobbing, Controls, and Continue. Continue is green, and I can't seem to select anything else. I assumed that that was the main menu, but perhaps not.

Perhaps dosbox hasn't grabbed your mouse cursor. You may need to use ctrl-F10 to toggle it using your mouse.
