I had a bike crash a few years ago, blood everywhere, my hearing was damaged. Luckily I had no cognitive issues with the crash. I commend you for fighting it.
I remember when I had my crash, for a long time after things felt different. Although i had injured that needed to heal, i had this appreciation of every moment. It's fantastic you are jumping back on the saddle, where you left off.
Although I have not always had the original unnecessarily voilence installed, I must really say that it's one of the most ambitious projects i have seen. My main issue with the combination of deadly reflex and unnecessary voilence was the amount of button presses required to play. I even considered getting a mouse with about 18 buttons, however my brain can't focus on that many requirements regardless. This always meant that I simply had the mod there, rather than took advantage of the mod.
Also, and correct me if I am wrong here, I believe duel wielding was based on a per hand, per swing, mechanic. Rather than slighting combining the stats of both. While a per hand per swing mechanic is far more visceral and "true to cause" it was hard getting the true potential out of a dw system. Maybe a combination of per hand, per swing, and stat combination might make the whole thing a little more seamless. It's like a shield adding to the Armour value and also being able to block. it's nice to have both. The illusion of stats and the reality of actual function.
What I think you did very right, and what I was able to partly focus on, was button presses and combinations. It's one thing to remember forward forward, back, attack, is another to reach over and press key 9. I think something that would be hard to do, maybe impossible, but also beneficial, would be to focus further on making UV2 like a fighting game in then sense of basic, yet memorable button combinations. It's great having 20 moves at any given time, but if you have to reach across the keyboard per specific move, it's very hard to manage. Since combat does not pause for you.
I am sure you have already considered this, but thought I would contribute to my personal preference. Also i realize this is already one of your goals. Just sharing my perspective.
In terms of gameplay, this and ares are insanely ambitious. Compared to the 50,000,000 BBB better bouncing briasts expansions that often take up nexus slots. Not that there is anything wrong with bouncing briasts, but I love to see the game move forward in exciting ways.
Also, in UV2, assuming you do get to finish it, maybe don't include a part of the ini file that requires you to edit it. I think a lot of people took offense at that. And regardless of if they should have taken offense or not, they did anyway. I personally read most of it, and naturally saw the check there.
I wish you the best of luck, and a lot of what i said probably has already been considered, or perhaps had already been implemented in the original and I just failed to take advantage.
Remember, health first, if you feel you could be doing something with your life that would heal you more, do that. However if you feel this hobby is something you are now ready to tackle, I can't wait for UV2.
