About the flying. I have tested it a fair bit (to the extent that it really needs actual testing) and you can use your flying mounts in Azeroth, you don't need new ones. The no-flight zone is simply lifted, though there are spots here and there that will dismlunt you and that needs adressing, but beta is beta. Flying won't change in any way, except for being able to buy 310% speed (Thus upgrading all your 300% mounts to 310%) for 5000g. Apart from that, flying works as before, except in Cata you can also do it in Azeroth.
On questing. Questing will be vastly improved in Cata not only because of flying mounts (Which is obviously only available to higher level players) but because most quests and zones are being overhauled. I'm going to name a few zones:
Westfall.
Redridge Mountain.
Duskwood.
Stranglethorn Vale.
Odds are most players know what those zones are currently like, they are bloody boring. In the Beta I've quested through them all on a Worgen, and they were brilliant, each and every one of them, Redridge in particular had a truly epic main quest that I will not spoil, simply because it's so damn good. I especially like the auto-follow up system on some quests.
In some quests you will have a gnomish radio for example, thus when you finish a quest you don't run back to the questgiver for the next one, he simply calls you on said radio and gives you the next one right then and there. In the hunting quest in STV, I killed 10 young tigers, then that thing popped up and said something along the lines of "You have killed 10 young tigers, you feel it's time to move on to bigger prey" and then that's what I did. That system is fantastic.
