I think Bethesda should really sort the quotes out.

'You ever tried mercenary work, it might suit you'
'Let me guess, someone stole your sweetroll?'
'Some may call this junk, me, I call them treasures'

The list goes on.

But I have to admit, these quotes do make for some funny jokes ;D

Patrolling the Mojave makes you want to take an arrow to the knee.

When they say they took an arrow to the knee you should be able to shoot them in the kneecap and have the guard scream "NOT AGAIN!" or "NO! NOT MY GOOD KNEE!"

If I had a nickel for every time someone stole my sweetroll...

Reminiscent of Butch and the birthday party in Fallout 3 :)

"Gods be praised"

I have no idea why he says that when I ask "What do you have for sale?"

That's the biggest problem with talking NPC background characters, you get to hear it all hundreds of times.

Gets to the point you could almost turn of voices and not careless.

I honestly think that's an easter egg. They put that line in refering to just that, Butch for Fo3. After all, he does steal your sweetroll...

Gray-mane, or Battle-born?

The problem with Skyrim these days is everyone is obsessed with death.

My favorite drinking buddy, let's get some mead.

That last one is particularly annoying, because I beat the living crap out of the guy who keeps saying it.

Breton Guards: HALT! HALT! HALT! HALT!

Dunmer Guards: We're watching you... scum.

Imperial Guards: Stop right there criminal scum!

Nordic Guards: I used to be an adventurer like you, then I took an arrow to the knee.

This talk of Butch reminds me of this one guys idea for character recustomization:

"So, you're walking out in the woods, when you see a small shack, with a sign saying 'TUNEL SNAKEZ RUL!'.

Apparently, Butch made it out of the Vault."

If only i could craft knee pads to sell to guards in skyrim....
I once stole a sweet roll on accident trying to talk to someone, and all the guards chased me and i wasn't able to yield...oh the irony!!!
between the guards and the little girl who wont shut up about working with her mom selling fruits and vegetables, i am tempted to just muting voice every time i go into a city....

You look sick, are you feeling alright?

I used to think this was the standard Skyrim greeting until I learned to look at active effects. :o
