Was the Stormcloak Rebellion that simple?

I'm readying up for another playthrough in anticipation of Dragonborn and I want to make a simple Nord warrior; a good, upstanding son of Skyrim. I, like I imagine any of the Nords would be during the civil war, am split on which side my character ought to support, but I feel its coming from a lack of knowledge about Ulfric's intentions.

I've tried learning about either side's intentions in previous playthroughs but my understanding always boils down to:
  • The Empire is only playing nice with the Thalmor in order to convalesce; Tullius is as uncomfortable with Elenwen as Ulfric and company are.
  • The Empire and its Nordic supporters are just as unenthused about the ban on Talos worship as the Stormcloaks are; Rikke appears to remain devout.
  • Ulfric has a penchant for "ethnic cleansing." He leads a militia to displace the Reachmen from Markarth when they were close to being recognized by authorities in the Empire and Skyrim as their own independent nation. He had also refused to desegregate Windhelm.
It just seems to me that the Stormcloaks are using the attack on Talos and the presence of Thalmor in Skyrim as talking points to paint themselves as a liberation army out to put Ulfric in charge. I also have a hard time dealing with the fact that Torygg would have embraced Ulfric's plan--and apparently this was common knowledge--but Ulfric challenged and killed him anyway.

Am I crazy? Do I just care for Talos' lovechild more than Talos itself? Should I just Nord up or shut up?
