Wasnt a big fan of settlements but now...

I love It! But I wish Beth did something with the building limit on consoles. Ive turned Starlight Drive-in into my crews paradise. A bar for Deac, Mac, [censored], and Cait. Dog house for Dogmeat with toys and a dog bowl. The forts 2 stories sadly due to limitations and armed to the teeth with Rocket launchers and Heavy Lasers. A Bloat fly tried flying in. Was paste in a sec. Have a caravan rest stop too. Cricket and Lucas pay frequent visits. Have an office area a rec room and even bathrooms, plunger included. If Beth removed those dang restrictions id turn this place awesome. Id make it a Saloon.

There is / are mods that expand the building size limits but I'm not sure how safe they are; I've hit the limit at the Starlight, too. Nothing fancy like I have seen in videos. I just put an industrial water purifier in the water-hole, then built hallway-end pieces all around it to serve as individual "bedrooms" for my settlers, and on one side expanded out to give room for Rank 3 vendor booths (they are tall!) and put some food planters on the "roof" and whipped up a nice little club with some diner booths, radio, disco ball, etc.

All too soon, though, I hit the limit and I haven't even touched the existing "malt shop" structure like I had wanted... and never mind setting up lightboxes on the big screen like I've seen some people do. Just not enough space/size!

Sadly im on console. I turned that "malt shop" into a death zone. Turrets everywhere. And added turrets to the large walls roof

You can bypass that limit by dropping a bunch of weapons and using the build menu to store them in the workshop, after which you can retrieve the weapons and repeat. Be careful though not to build more than the system can handle. If you start getting a significant framerate drop then quit while you're ahead or risk crashing. The limits are there for a reason. I've heard of console players exceeding the limit considerably without ill effect though. Just be careful!

The limit is there for your protection. The more objects you add, the higher the polygon count and the bigger the impact on performance. It's entirely possible build until your game breaks. My PC can handle a lot, but it is much more powerful than a console. Even still I can build until I get drops in frame rate when I take the limit off.

If you want infinite build size, just drop all your junk loot on the ground in the settlement in question and manually loot it in Build Mode. Observe the effect this has on your Size limit bar on upper right . . . unless that works differently on the console version.

Infinite build size sounds good but as someone pointed out your console doesn't have infinite resources to process all that stuff you build. Eventually you might end up lagging your game, worst case, making your save unplayable.

That's true. For those on PC with extra overhead, you can do this:

1. Hit '~' to bring up the console.

2. Click on the Workshop Bench.

3. Type 'setav 34b' and a number after it. I usually do 10000.

4. Close the console, and enjoy building to your heart's content.

Like Mitheledh warned, however, make sure your PC can handle it. If you are already struggling to maintain 30+ frames a second, I'd stick with the default limitations. However, if you're like me, and can hit 90-100+ FPS, you can safely exceed the default build limit and not drop below 60 FPS.
