Anything and everything. What ever gets the job done. Be it a baseball bat, or a laser pistol. Gonna be a kid in a candy store when Fallout 4 comes around, all of dem mods for weapons.
I'll probably use actual Guns. I really want to use the Sawed-Off Shotgun and that Sniper Rifle from the gameplay trailer and melee weapons in case I run out of ammo. However, if I can be good with Energy Weapons too, without limiting other things I can do like Science, than I would also use a Plasma Rifle.
Since unarmed and melee require closing range (while foes shoot at you with Assault Rifles) and in VATS there is just ONE target, I have never really used either (except against Radroaches, etc to save ammo).
I generally prefer sniper rifles, outside of VATS (I can hit things VATS says I can't). Ideally ~silenced~ sniper rifles so I can winnow a pack of foes from a distance without them running all over the place, making subsequent shots harder. When sniper ammo is low, I can use bolt-action hunting rifles and such.
In close combat, though, I generally prefer silenced pistols with large clips and low Action Point cost so that I can enter VATS and perform some insane gunkata moves. Without VATS, in such close quarters, I find myself spinning around just trying to FIND my targets as they are peppering me with shots. With VATS (at least, Fallout 3 VATS) I could take my time and cycle among the targets. With the new slowed-time VATS, this may be harder. In Fallout-3 I've been using a Bullet Time mod that simulates the slow-time effect of Fallout-4's VATS... since it's NOT VATS I still have to manually aim, but it's getting me more comfortable with making decisions in the slow-time frame instead of stopped-time Fallout-3 VATS.
In my most recent play-through I tried to use just pistols... but I kept getting attacked by foes who detected me at range and used longer-range weapons against me. Worked fine when i could sneak through an abandoned building and round a corner and BANG, one-shot with the roar of a six-shot magnum monster pistol... but less useful in the wilds. I eventually ended up picking up a random Assault Rifle to use until I could get a sniper rifle and return to m y preferred style (sneaky sniper).
I've used shotguns before ---- again, best in enclosed areas like buildings, and their damage IS impressive; reload times usually turn me off, though.
I have never been a fan of energy weapons for some reason. I recently downloaded an energy weapons graphical improvement mod (EVE), though, so I may dabble. One problem I have with them (aside from scarcity of ammo) is that they have a chance to disintegrate bodies, which can make it hard to see and hence LOOT the ash piles later on. And you can't drag bodies into amusing configurations if they are ash piles.

I don't like energy weapons too much, other than that I take anything.
Energy no question & with the ability to make weapons, my Plasma sniper rifle will be my main weapon.
Energy weapons and of those lasers - plasma is usually too slow outside VATS to hit a running target and therefor wastes a lot of precious ammo. On the other hand lasers do relatively little damage so you need some extra shots, but in the end it just works out better.
New Vegas different types of ammo made guns fun to play with, and with all the extra perks for it shotguns can be a blast.
Melee/unarmed for the start when I've run out of precious ammo or trying to conserve it over some weak enemy - but ultimately I prefer not to get close and personal with Deathclaws. Something about liking my arms and legs attached to the rest of my body.
Oh, and grenades and mines. Not to really combat, but to soften up enemies and hopefully cripple some legs. For said Deathclaws and Giant Radscorpions and Super Mutants running after you.
Plasma pistol... Love it. I usually don't use melee weapons but who doesn't love the chainsaw? I mostly use pistols, submachine guns or plasma weapons. Every once and awhile I'll roll differently. Like a sniper rifle or assault rifle. I don't like laser weapons generally.
I mostly prefer any kind of rifle which does plenty of damage with a single shot. I like to stay at distance from the target.
I enjoyed Energy Weapons in past in FO3/NV but found them rather limited compared to firearms. With the new modification system I think I'll definitely be tempted to try using Energy Weapons more; I want to try and put a long pistol barrel and a stock on a laser pistol with a repeater muzzle to see if I can have a Laser SMG.
Apart from that I always make sure I'm never carrying more than two ranged weapons and short melee weapon at a time.
Guns for me! I hope I can get my marksman's carbine back! Throw in an anti-mat for when it's a hard target and I'm golden.
Other than that I will use anything but melee and unarmed normally. Why whack something to death when I have bullets? Or grenades? Mines. Throwing spears. That .32 magnum I forgot in my inventory that does 2 dmg... anything is better.
High caliber sniper rifles for long range .
And magnums for close range.
Energy weapons and two-handed melee weapons. Sometimes I go for unarmed...
i usually use pistols or the longest range rifle i can find but NV made shotguns really fun imo. special energy weapons are fun too, the metal laser (or whatever it was called) from the pitt was a [censored] laser shotgun, that is just amazing!
A nice, sleek pistol has always been my favourite. Preferably silenced but usually when they're silenced they're weak as [censored].
I'm always prone to using sniping weapons. A scoped hunting rifle has been my primary workhorse for many a playthrough, with the anti-materiel rifle as backup for the bigger targets. However, it also depends on how I want to play a giving character. Sometimes I want to go energy weapons, so I'll use primarily those. Usually lasers. The laser rifle from my main weapon with the gauss rifle for the biguns.
