They have to cater to casual players. They also have to cater to many different screen formats. I bet you it looks a lot darker on a CRT monitor that is well calibrated.
I am one of those that really enjoy the "darker nights" mods for Oblivion, even though I usually tweak the lighting by hand because it's too dark for LCD monitors, and that's because LCD monitors typically do what is called "black crush" where all kinds of very dark colors get crushed into what appears to be solid black.
So, I'm not sure they will do anything about the nights. They could actually get away with making it slightly darker and upping the contrast just based on the fact that many areas will be blanketed in snow.
... And just so you know making night "grey" is realistic. The human eye in the dark tends to desaturate everything, because our eyes' rods are more light sensitive but not color sensitive. Our eyes also tend to prefer the blue end of the spectrum as the brightness lowers, so night usually has a bluish cast.
