Ok, are there any mods that replace the textures for creatures? Because there's one really popular one for Morrowind and I was wondering if there's any good ones for Oblivion...

The "Mythic" mods listed above cover the largest number of creatures, I believe. Also, I hadn't noticed until now, but it seems that Mythic Ghosts and Goblins isn't listed - make sure to get that too.

Those are good, but sometimes I find the textures to be a bit too colorful/different for some cases. Is there a replacer that strictly adheres to the original textures, but with a higher resolution?

I wonder... would Dall's Creatures (link: http://tesnexus.com/downloads/file.php?id=14532) be any more suitable for your needs? Or, perhaps, parts of it?
