What are you going to be?

As long as Argonians don't look horrid again I'll being playing as one, and I'll definitely play as an Orc as well.

Argonians were pretty good in oblivion to me.

Their faces are pretty good, but otherwise they just looked like Imperials in costume.

Nord probably, I think that is what I used in OB. Plus I am in the land of the Nords and I like starting off as a Human more so than anything else.

A Bosmer, who sneaks around stealing things, while trying not to get caught.
Not really sure what to call such a person.

I can't tell if this is sarcasm at the fact of people being sad because they removed classes or not... At the possible chance of looking like a fool I'm going to say you would be a thief sir. :P

If someone asks you of your trade you could just say "a little of this, a little of that."

A dunmer mercenary (I know classes are out, but that is what your character is) who always gets the job done...unless someone pays more for him to switch sides, in which case he does that :P
He'll have some Dunmer sounding name, I can't think of one off the top of my head, I'll deal with that when I have the game.

I'm going to recreate my favorite Oblivion character... Lets assume it's a distant ancestor. I'll recreate my custom class by focusing on certain skills.

Name: Nero
Race: Breton
six: Male
Sign: The Apprentice
Class: Blade Mage
- Specialization: Magic
- Attributes: Strength & Willpower
- Major Skills: Alchemy, Alteration, Blade, Block, Conjuration, Destruction, Restoration
- Info: Blade Mages specialize in unarmored combat for maximum spell effectiveness. To compensate for the lack of armor a high alteration skill is required for advanced Shield spells. Alchemy is used for poisoning blades, and for Resist Magic Potions (because of my birth sign). The Strength Attribute bonus enhances the Blade skill, and increases the encumbrance limit to haul loot.

Favorite strategy: Enchant a one handed sword with 100% Weakness to Magic for 3 seconds on strike. Follow sword blows with high level destruction spells.

You don't actually pick skills anymore, there are no major skills or minor skills, what you use is what levels up. Focusing on some is still advisable though, so it's not a big deal in terms of your character build. Ad for classes, they are out.

I know... I said I'd "recreate" my class by focusing my attention on certain skills.

I like no classes, because my warrior can start learning magic and not stay underpowered.

So let's hear some descriptions about your characters, without mentioning what "class" they would be.

I'm going to play a warrior Nord in my first playthrough to stick with the culture of the game, and after that I'll play through as a sneaky dunmer.

My first build is either going to be an Orc or Nord woodsman who is eventually taken into lycanthropy.

We know there are no "classes" but our gameplay will define our "class" thus the "class" is still alive just in a better system.
EDIT:
For those who don't know you still gain skill by using weapon skills as well as others skills and that is still how you level but there is basically no main skills.

Okay, I'll bite. I don't have a name in mind, so let's call him Urge for now:

Urge is a Dunmer mercenary, he favours swords and light armor for mobility, and he has a taste for destruction magic to both surprise and terrorize his enemies and impress the ladies (They like shiny things right?). He's cynical, snarky and at times rather condescending, but he's not a complete dike to everyone he meets, he knows the value of having friends and reliable contacts, as a Mercenary that's a great way to get work. Urge is all about effieciency, he always gets the job done, and does whatever it takes to do it. Morals mean nothing to Urge, as long as the pay is good enough or he deems something absolutely necessary that society would condemn, he will do it without hesitation, allthough he'll carefully consider his actions and their repercussions, if it costs him too much then he'll find another way, but if there's only one viable option the the consequences be damned. Allthough he will try to do the "right" thing whenever possible, he's a pragmatist and an oppurtunist at heart.

I see Urge as an experienced Mercenary, someone who has seen the world and killed people for money all over it, in addition to money he also highly values information. Information can be a powerfull tool, and gathering as much of it as possibly is something he's rather passionate about, his motto so to speak is "The more you know about your enemies, the easier it is to kill them. The more you know about your friends, the better prepared you are for when they inevitably stab you in the back." or something like that.

Seeing as you can customize bodies now, I'll try to cover appearance, though I don't know about hairstyles and stuff yet obviously. Urge is as mentioned a Dunmer, with dark gray skin, bright red eyes and medium length black hair (Something practical but still fancy looking). He's muscular but not too bulky and covered in old scars (If scars are an option I will fly to the US, find Bethesda's offices and hug a developer).

Urge has a taste for the finer things in life, namely ale, wine, ladies and the occasional Skooma.

I'm ot sure why he's in prison yet (You start as a prisoner according to GameInformer) but I reckon he actually deserved it, unlike many characters i hear of who were framed. Nah, i think he just stole from the wrong guy or killed a target that happened to have powerfull friends, it doesn't really matter, he's getting out to do it all again and save the world to boot. After all, if the world gets eaten by a giant dragon, there's not gonna be a whole lot of work, women or booze left.

How can you decide before you know what everyone's going to look like in the new engine?

Quite easily, I know I'll be playing a Dunmer on the first go, I always do. I know what kind of basic playstyle I'll be using and I know what kind of personality my character will have, I don't need to see much to decide that stuff, though the one screenshot I saw of a human women (Not sure which type) looked absolutely amazing, gone are the days of terrible faces apparently.
