Lol, i made a redguard warrior, imo its really hard attacking lol you have to drag the mouse while holding (i have low comp mouse sens) and first time i died by the rat, and the second time like 2 of 8 hits did damage to the bat. what am i doing wrong? should i higher my mouse sense or what?..

isn't there an easier combat way?

save and reload until you get used to it

crouch against rats and other things that are close to the ground (bears, tigers, whatever)

if you need to turn up your mouse sensitivity, do it

Or change your view settings in the control. If you change them to view, you can easily aim at low lying enemies.

Now my last question: im at that.. last thief dude thats nvde. he only blocks all my attacks, didnt hit him once

tried killing him 5 times now... no hit

The archer who is stucked behind the tables, right?

Keep hitting him, running back and forth on each hit to avoid taking damage.
Maybe your weapon skill is not high enough, and make sure you use a weapon your are profficient in.

Or you can just run past him, he's stucked in the tables anyway. (Though I recommend against it. He might have interesting loot)

im not sure what you are fighting that cannot be hit (unless a vampire somehow spawned in the dungeon)
