You were probably thinking about the Ratslayer which is a unique version of the varmint and has a high crit multiplier (5 i think ) .
Cause the default varmint rifles only have x1 crit like most other weapons according to fallout wiki

I think that's off, I've been able to drop Deathclaws fairly quick with sneak attack criticals using hollow-points.

I play on hard, and a few weapons ive found easily kill deathclaws are:
Ballistic Fist - Probably my favourite weapon (love unarmed builds). Combine this weapon with the perks Purifier (50% more dmg vs deathclaws), Piercing strike (negates 15 DT), have a unarmed skill of 100 and take advantage of the special moves in VATS. Should be able to one shot normal deathclaws, and may even one shot deathclaw mothers and alpha males. No need for sneak attacks either.
Anti-material rifle - use with match load ammunition, shoot them in the head from afar while in sneak, should be an instant kill. You may run into problems when other deathclaws detect you afterwards..
Ranger Sequoia - SWC rounds, cowboy perk, bloody mess perk, lord death perk, 100 guns. should be able to hit 100 dmg with -6 DT. This thing can one shot deathclaws in a similar manner to the AMR, except it fires faster and is useful for taking on more than one.
