As to Skyrim, next to nada has been released to the general public about the game. All we have is the trailer, speculation, and a chapel full of poll threads. In February, Skyrim will have a fourteen-page article--as well as a sixy cover--in Game Informer magazine. Hopefully this article will have screenshots and more information about the story of the game.
I would not be so hasty to assume that the game is about dragons as we know them. The Elder Scrolls has a fantastically deep lore behind it and there are many theories as to what the dragon pictures in the trailer may represent. It is set in the Dunmer homeland of Morrowind (almost entirely on the large island in the center called Vvardenfell) and it has a much more unique and alien feel compared to its sequel. Morrowind is the game that really fleshes out the Elder Scrolls universe and its complexity, it has many more factions and quests, and in my highly biased opinion the Main Quest is more interesting and cool, while Oblivion's is still fairly rad.
If you find yourself getting more interested in the Elder Scrolls and its very complex story, I would encourage you to hop on over to the Elder Scrolls Lore section and to lurk there and read. You may be overwhelmed at first, I've been following it for years and I still am. Not to mention the Forum Scholars Guild, where the smartest of the Lore Buffs propose theories and thoughts about the Elder Scrolls.
