Star Trek Voyager. Not really rebooted, though - I'd love to see a full-blown sequel, in which characters like Tom Paris, Harry Kim, B'elanna Torres, the Doctor, Tuvok and Katherine Janeway take to the skies once more.

I also love Star Trek TNG, but Voyager is the series my wife and I have enjoyed the most.
