Alchemy - Unless this game element is removed, it'll be my prime source of entertainment. Since the days of Morrowind, I've kept it as a Major Skill, doing it when and wherever possible, for income, useful buffs, and the handy INT boost that comes with using it constantly.
Light Armor - ...or whatever its equivalent in this installment is. Mobility beats Defense, or at least that's my take on it. That, and the fact that all Heavy Armor in Oblivion looked bulky and, in some cases (Daedric) looked like crap (both evil and rusty looking).
(Long) Blade - Always had one with me in Daggerfall, Morrowind, and Oblivion, so I'll keep some manner of longsword, held either in one hand or dual-wielded with another longsword. Daggers aren't my style, and two-handed blades are too, too slow. Blunt/crushing weapons just aren't my thing. Sure they're effective, and truly cathartic to catapult an enemy into a tree with one, but they're just barbaric. A spear might be nice, but since those "can't be found," I'll stick with the classic blade.
Enchant - Was that confirmed to be in? I forget... If it is, then this. It was far too handy in Morrowind, and I sorely missed it in Oblivion. If it's not in, then I'm not sure. These are the only three or four I always keep with me.
