Ive finished MQ, all guilds except mages, an KoTN, so what other non journal quests or dungeons or anything that can pass up a week or so

If you're looking to pass the time you could do the Mages Guild and KotN. Or you could start a new character. If you're on PC you could install some quest mods. You could make your own quests, such as collecting every book in the game, collecting full sets of armor, ect.

Im on PS3, ive finished KotN, and the Mages Guild recommendation quests but never got any quests afterwards so not sure how to start them, i could try to defeat Umbra not sure where or how is there a quest for it

You have to talk to Raminus Polus, he's in the Arch-Mages lobby.
