What The HELL Is Going On With The Ammo Situation?!?!?!

I've played Fallout 3, really enjoyed it so i picked up new vegas.
I've been playing for about a week now and the ammo situation is driving me CRAZY!!!
I have 17 guns, and thousands of caps worth of ammo...
EVERY time i go to shoot someone i get ONE shot and it says 'low ammo' and i get killed while fumbling from one gun to the next trying desperately to find a gun with more than two shots.

For example,... i select the 10mm pistol, move over to the ammo section and '10 mm round (101)' is highlighted
(which i take to mean there are 101 shots?),...
i shoot once, then i have no ammo left,..
i try selecting a different weopon, the same thing happens and i am shot dead in the process.

I thought it may have something to do with my 'GUNS' skill so i loaded my skill points up to 50 and its done nothing.
Its SOOOO frustrating not having a reliable sense of how much ammo i have and it is killing my enjoyment of the game.
can somebody,.. for the love of deep [censored],...PLEASE explain how to navigate through the unecessarily complicated system.

I just want to know what ammo goes in what gun and how much i actually HAVE of that ammo.
I know im doing something wrong, but i'm equally sure it's not my fault.
I'm SOOOOO sick of being shot at while i check my pockets.
PLEASE help,... i'll babysit your kids.
