One of my characters assembled quite the library, collecting books. Another was unable to pass up crystal balls, and had quite a large collection of them.

Other good ideas for collecting might be quills and inkwells, tools, skulls or other bones, crumpled pieces of paper, scales and weights, yarn, or various other clutter...

More valuable items for collecting... Goblin totems, zero-weight clothing, shields & armor from all the various city guards, the stuff hidden on the outsides of forts...

Calipers! M'aiq the Liar must be onto something!

Nirnroot and lovely gemstones are also hunted down by most of my characters.
The hourglass is also cool. It reminds me of Raistlin Majere.

Skulls, crystal balls, scales, alchemy equipment and potions to line the shelves in my Cheydinhal home. There are several baskets full of pearls arranged neatly about the first floor. The desk is covered in amulets of all kinds and the small table is covered in rings and gem stones all all kinds. Arround the fire place sitting chair are stacked volumes of cool looking books and the dinner table is covered with Deadric hearts (nom! nom!). A large weapon stash is by the door and the upstairs room has many fine examples of armour sets. I also have numerous Alied artifacts on display.

The thing that makes collecting work for me is having a "complete set" as a goal. So I've had characters collect each of the city guard armors, or all of the Goblin Totems, always something that has a finite set to find. Then it's fun to find an appropriate place for the display.

That "complete set" doesn't have to be unique items, as long as there is a sense of "having them all", so you could do an Immelda Marcos and collect a pair of each of the types of shoes in the game.

guard shields from every city, i tried not to kill any of them, and a matching guard armor.
Skill books, i kept all of them and stacked them in my basemant, its way to hard to get them into shelves
Full suits of every type of armor, started at level 25 couldn't find dwarven for the life of me, also i didn't buy any for my collection
enchanted swords
spell tomes
restore health potions, mine are better so right now i have over 200 lol

I miss pick-uppable pillows from Morrowind. Without pillows, my life is empty.

In Oblivion, gems! Sparkley.

Pillow forts ftw!

Helena likes collecting gems, pearls and clothes. Pretty things, basically.

Edit - I forgot to add her fondness for books. Especially series of books. She aspires to one day have the most complete library in Cyrodiil.

Some of my characters collect things, some don't.

My female Bosmer Assassin (Drehdwyn) collects town guard uniforms and shields. Of course, she has to kill the guards first.

My male Dunmer War Mage (Dreloth Vandaal) collects Welkynd Stones, Varla Stones, Sigil Stones (only the ones he doesn't use), http://tesnexus.com/downloads/file.php?id=36362 and http://tesnexus.com/downloads/file.php?id=9412 (again, only the ones he doesn't use for enchanting-some are very useful to mages).

My male Bosmer Recon Sniper (Elberond) collects Ebony arrows, enchanted or not. He never fires them, just collects them.

Attractive armor, clothes. I use my own mannequins, and the Armory Lab mod (5.x) to show them off.

Also gravitate to companions with genuine personality: Vilja, Fergus, Viconia, Stoker Wolff, Arren, etc.

In Morrowind, I collected books, but Oblivion has added so very little, and most modded homes provide their own libraries. I tend to grab one-off items if I can find them, and if they're not only part of the untouchable background.
