Personally, I'd love to see a retexture of the Iron Armor set. Because it just looks horrible, like it's made out of plastic (that's especially true for the leather parts). Morrowind's iron armor looked http://members.shaw.ca/rado907/armor/heavy/mor-ironarmor.jpg. That's what the worst heavy armor of a game should look like - as if you can't move at all anymore once you wear it, but also as if it's kind of safe because of that. Much of it came from the bulky "old-fashioned knight's armor" design, sure, but I think a good retexture could capture this feeling to some degree as well.
I don't really see the need of retextured ghosts and wraiths, but I understand why people want nice rugs and tapestries. Personally, I think that most texture replacers for those look as if they simply exchange the texture with some image they found on Google... completely careless about style. But then, I also think that's basically what they did when the devs made the rugs in the first place. In Morrowind, we had so many unique designs... in Oblivion we just get Persian rugs. So... yeah, there's definitely room for improvement.
