So, whatever happened to Dragonstar?

Dragonstar is a major city in Skyrim on the border to Hammerfell, but is not in-game. What the fudge?

On closer inspection, at the approximate location where one would find it in-game is a wide open area the size of the other big cities but with simple pine trees plopped symmetrically into the ground (this is on top of a high mountain and you can't get there without TCL in console, but it's still within the invisible border of the land so you don't have to disable border regions)

Also, the area doesn't look nearly as "prepared" as the rest of the surrounding area (there is only 1 ground texture, no rocks, only trees) and there is an "interrupted" dirt-road texture going up the side of the mountain to this location, though covered in big rocks. The road passes by an unpopulated watchtower with no map marker on the way up the mountainside.

...It almost looks as if it was there, but got eaten.

What ever could have eaten an entire city? Deadline day?

Correction: Dragonstar WAS a major city in Skyrim. In the third age.

Seems plausible.
The smallness of Winterhold and that story with no quests or follow-up whatsoever about most of it falling into the sea reeks of cuts due to time constraints as well.

It still exists in the lore.

Dragonstar is a city-state in Hammerfell, just south of the border with High Rock and Skyrim. The city was once home to a gladiatorial team known as the Sacred Rage.[1] During the War of Bend'r-mahk, the forces of Skyrim advanced into Hammerfell and besieged the city. The situation has persisted to at least 3E 432.[2]

The city is divided into western and eastern sections, walled off from each other, each with their own government. Dragonstar East is still under the control of Hammerfell, while Dragonstar West is predominated by Skyrim. An atmosphere of deep mutual distrust prevails between the two sides. The city has an arena pit, a prison and guild halls for the Mages Guild, Fighters Guild and Thieves Guild. Shadowgates can also be found in the city.

I smell unfinished game content turned into DLC.

Unless I forgot, I thought it was in Hammerfell, near the border, but in Hammerfell.

Then nevermind. Otherwise, everything can be explained with that handy 200 year gap.

It's actually ON the border. Imagine the border to Hammerfell being the river Thames and you're in London. Except the river is not a river but a high wall.

Yeah, I should have started that anology with East/ West Berlin as that is EXACTLY what this place is.

The fact that the quote you showed mentions the Mages Guild and the Fighters Guild, both of which no longer exist.

It is still the last mention of Dragonstar in the Lore. Cities may disappear like the Dwemer, but people won't suddenly have amnesia about it. If it's gone, then there would be something describing how. Plus, the weird spot in-game where it would have been should it be included with the game strongly suggests it was planned or even existed in there at one point.

Also, try not to over-exert your devil's advocate muscle!
