From all the options we have, would you say dwarven or ebony since they arent race armors like nordic, elven or orcish?

I'd go with Ancient Falmer as it would stand out from the dark skin nicely.

Steel armour or banded iron.

Their Hammerfell garb suits them the best...Redguards are so boss with a blade that they don't need any fancy armor

I had a Redguard Paladin once who used Dwarven armour (without the helm) and Dawnbreaker. With a Restoration spell in his left hand. Needless to say he looked like a total badarse. Long grey beard also.

My Redguard warrior gal wore Wolf armor at first and then Stahlrim after I got Dragonborn. I thought she looked nice.

Try Nordic carved or fur armor.
