By the way I didn't pick all the races because most people would probably say High Elves and it would be too easy.

I'm not exactly brimming with a desire to commit genocide against any of my fellow humans.

Maybe Dwemmer if they ever returned. They seemed to be a universal race of [censored].
What did the Dwemer of Morrowind and Hammerfell ever do to be labeled a "universal race of [censored"?
I could swing maybe the Dominion, but that does not include all Altmers, as far as I know.
I can't imagine having enough rage to want to kill off an entire race, even in a game. Just... a bit too much.

Nords. Stupid Padomic influences messing up an otherwise peaceful world. If it weren`t for their genocide, raids, and general upsetting the status quo, the Mer may have escaped by now.
I tend to think of them all as one group given they all went along with the Heart of Lorkhan project with rare exceptions. So, one government which enslaved the Falmer.
Hmmm, wiping out the Dwemer would be Reeeeally easy.
In my opinion, I wouldn't miss the Nords one bit. They're the only race in TES that I had absolutely no interest in even making a character for. In Morrowind, they're rude, generally stupid, and extremely arrogant, and it obviously gets them in trouble frequently (especially with witches).
My favorite Nord-related tidbit in Morrowind is in one of the series of books, where the one Nord the author meets in a Valenwood village is badmouthing almost everyone, and when asked why he's in Valenwood, he mentions that he's a diplomat. If that's the most tactful and diplomatic individual that the Nords could send, it doesn't say a whole lot for the rest of the sorry lot.
They re-make the joke in ESO, with a Nord diplomatic party being portrayed as a bunch of gullible stooges who you trick into wearing gaudy comical outfits, and carrying tourist knick-nacks as Argonian Totems.
Where are the Bretons? I never liked their snooty attitudes.
Redguards are chill. Nords are too dumb to hate. Imperials ...well... They're good for business, I guess.
I hated the Nords in every game until now. Now I have Lydia, Aela, Serana (she's kind of a Nord), and Igrond so it's hard to want them gone now.

Ugh, I dunno, Nords I guess, cause I like them the least out of the three presented. If Skyrim's anything to go by they'll all be Colovians soon anyways, so that's okay.
I side with the legion in skyrim but would wipe out imperials in a heartbeat, they're a totally redundant race. You could easily still have the imperial legion without a race of imperials. All races should have an ancient primitive backstory which their name and adaptations nod towards, then you can have cliques and societies and empires and etc etc separate. The imperial legion by definition should be extremely multicultural. That tenth race could have been so much more.
Redguards and Nords I quite like playing. I still have fond memories of my Nord Witch Hunter in MW. It was a bad time to be a Breton, female, wear robes and/or black or read a book in Vvardenfell.
Imperials are too uninteresting to care about.
So none of them.

Imperials weren't supposed to be a race originally, so perhaps that's a reason, but not a particularly good one IMO. Though one has to admit the portrayal of them is rather uninteresting in Oblivion and Skyrim. Nords OTOH are rather stereotyped in Morrowind and to some extent in Oblivion.
Edit: Now that I think of it, the Nords are pretty diverse in Oblivion in terms of personalities. I guess it's that all the male Nords have this booming voice, that makes them seem stereotyped.
