While movie adaptations are a bad idea, how about a series or mini-series based on some of the more interesting lore and history? Either live-action or animated, I think some really good series could be made that not only flesh out the world more, but finally bring it to a cinematic medium, attracting new fans to the series.

To start off, the first possible series that comes to mind is Alessia's Slave Rebellion, establishing the theme of man versus mer and a good starting series. They could call it "TES: The Slave Queen". The series could revolve around the buildup to the rebellion, Alessia being given the Amulet of Kings and making the covenant with Akatosh, Pelinal and Morihaius coming into the frame, then the actual rebellion itself and perhaps ending on a hopeful site as the Alessian Empire rises. You could then follow up with a mini-series revolving around the Alessian Order and the Battle of Glenumbra Moors, the first series revolving around man versus elf, and the new one about cooperation between man versus elf against a common enemy. The Direnni, the Colovians and the Nords against the Alessian Order.

Then of course you have one of the best options for a series, Talos, the Rise of Tiber Septim. From Hjalti Early-Beard of Alcaire, to General Talos of Skyrim. to Tiber Septim of Cyrodiil. There is also the option of a trilogy of films revolving around Tiber's conquest of Hammerfell and the events of Redguard, perhaps tying into the series. For further series ideas, the Wolf Queen and the Camoran Usurper or perhaps adaptations of the stories of "A Dance in Fire" or its sequel, the "Argonian Account".
