Oddly, that's something I'm on the fence to. I mean, obviously I can shape my Waifu however I want. But...the question is...Should I? It's not HER story (unless I play a woman), it's MY story. She has her own destiny to face, and I feel compelled to leave her be as fate dictated.

I doubt I'll use default in Fallout 4, but I have in Mass Effect because it's so damned hard to actually get a decent-looking character in a Bioware game.
I likely will at one point maybe right from the start. I have done it for most games I have played that allowed the use changing the character
I don't mind playing default characters; so long as they've got some kind of biography, or preset stats and aptitudes.
If the default PCs all start the same but for appearance ~ what's the point; there is no significant reasons to choose them or choose something else.
I'll probably spend most of the first day with the game customizing both characters. I usually spend a lot of time in character creation with BGS games. On future runs I might leave the character I'm not playing as default if it doesn't effect the games story at all.
Your wondering who here is going to get plants to play the default versions? Might be a bit hard for them, you know not having opposable thumbs.

I like the way the default male character looks so I'll probably leave him be.
I'll play as the male and female, but don't count on my characters actually looking conventionally attractive. I like mold-breaker protagonists. For Fallout, I like trying to make my male character look as much like Frank Zappa as I can. For when I go through as a woman, I'm not sure.
If I can actually adjust the body shape to be short and overweight, though, I'm totally going to go through the game as a badass action-style hero that just happens to be short and fat.

When it comes to customizing the spouse, I actually don't mind how Nora looks default, but I think I'll still have a go at customizing her as well. Then again, that will be another extra hour wasted in the character creator.
Personally, I'm quite happy they used their limited demo time efficiently - instead of going through all sorts of character customization stuff on both genders, and wasting time that could be spent talking about other features, they showed a variety of stuff on one and said "yeah, you can play either." No crazy anti-woman stuff, just using demo time effectively.
edit: and yes... in Beth games I almost exclusively play female characters.
Don't think I could.. I love creating characters. Sometimes I start up a game just to play with the character editor and nothing else.
