Why we're fighting is something that's left up to your character to decide. At least, I like to think that's the reason why the game assigns no motive to your character. If they told you why you're character is doing things, that would conflict with the whole "Be whoever you want" thing. To support that, the game should try to force as little on you as possible, so while you may be given quests, the game tells you only what you should do, maybe it will tell you why the quest giver wants you to do it, but it won't tell you why you're character would agree, that's for you to decide.
For my own character, though, it will depend on what sort of character I'm playing. If saving the world from a dragon god bent on its destruction isn't enough to motivate my character, than maybe the promise of fame and fortune will be. Or maybe it won't be and my character will just say "Screw you Esbern! Go find someone else to kill those dragons! I have better things to do!" and go off and join the Dark Brotherhood instead.
