As it has been said, the RP reason is whatever you want. But for the game reasons:

Morrowind: You are destined to become the Nerevarine, you don't really get a choice lol.
Oblivion: Also kind of destiny, plus you are tasked with doing it by the emperor (who you totally owe for busting you out), then asked by the new emperor.
Skyrim: Well it appears to be because you are the last of the Dragonborn, you are the only hope.

Now that I think about it, if I was the actual dragonborn, I would find some lusty wenches every time I went to a town after becoming famous. I am the last of the dragonborn so the logical thing to do besides slaying dragons is make as many children as possible to continue the good fight after I am gone.

Well, my nord would probably answer things like these

1 - People always like heroes. and people liking you = chances to get drunk for free!

2 - Maybe once you're famous, that darned barmaid will stop slapping you when you hit on her

3 - I get to prove I'm a real man! and not some sissy coward... like those Altmer weirdos...

4 - At least I'm getting a different workout. Doing 150 push-ups naked in the coldest place in Skyrim, while bandits are hitting me with axes and a dragon's using the shout "push" on my back to keep me down, well it just isn't challenging enough...

5 - Guess I needed a reason to climb the Throat of the World on a handstand

6 - I don't need a drunk! I'm reason... *falls down*

And so it was that after flirting with a red headed tavern wench AtomicAndy slammed down his tankard of mead, looked at his fellow adventures, -who were discussion the dragons that had become to terrorize Skyrim's country side- he said: "They ain't gonna kill themselves." with a grin. He then led the party out of the tavern to go slay some dragons. :D

Somehow out of that little quote that's what I immediately thought. And as far as I'm concerned that's my reason now.

Why we're fighting is something that's left up to your character to decide. At least, I like to think that's the reason why the game assigns no motive to your character. If they told you why you're character is doing things, that would conflict with the whole "Be whoever you want" thing. To support that, the game should try to force as little on you as possible, so while you may be given quests, the game tells you only what you should do, maybe it will tell you why the quest giver wants you to do it, but it won't tell you why you're character would agree, that's for you to decide.

For my own character, though, it will depend on what sort of character I'm playing. If saving the world from a dragon god bent on its destruction isn't enough to motivate my character, than maybe the promise of fame and fortune will be. Or maybe it won't be and my character will just say "Screw you Esbern! Go find someone else to kill those dragons! I have better things to do!" and go off and join the Dark Brotherhood instead.

My reason? The Eragon movie. All dragons must be (Dalek Voice) Exterminated least they bring up the terrible terrible memories of that movie.

I think it's the same reason you start in prison. You're supposed to make up a reason for yourself. The main quest is completely optional, after all.

Yes, I know that the Temple and Great House Indoril probable aren't around anymore. But my Dunmer has a long life-span and is (probably) the last Ordinator.
