Why can't I import Fallout 3 NIF's from mods?

You have to add the search path for textures in your NV Data folder in NIFSKOPE. You can find it under Render/Settings/Rendering. Autodetecting doesn't work because NV is new and NIFSKOPE doesn't know anything about this strange SteamApps path yet.

The thing is, the texture is included in the NIF... The mod didn't come with a separate texture file.

Sorry I don't know any NIFs which includes textures. Maybe it's still in the BSA. Can you tell me the path and filename that's in the 'BSShaderTextureSet' entry to verify this?

Where do I find this "BSShaderTextureSet"? I went through the info tree on the left but couldn't find it.

nifs can actually contain nipixeldata.. not that matters in this context.

Anyway. yeah, if the mod did not contain addition textures, it could be using vanilla fallout textures. or something.
