I've noticed in the trailers, that the main character doesn't seem to block any blows, and well, that seems weird. I would like to be able to block some attacks with my weapons, makes the battle more realistic and dynamic. Is that possible or not?

Todd Howard svcks at video games, that's why he wasn't blocking. If you have a shield or two-handed weapon or just one one-handed weapon equipped you can block. Dual-wielding or weapon/spell cannot block.

You can block with 2-Handers, Shields and 1-Handers without something in the other hand. You can't block while dual-wielding 1-Handers and/or spells.
