Hello im a total newcomer to Elder Scrolls games and to be honest RPG games and a utter noob. I thought i would give Skyrim a go and so far its unreal im loving it i dont know what ive been missing i have been playing counter-strike for 10 years competitively and i have got bored so i thought i would give these type of games a go. Only problem i have is what guild to join, im a wood elf stealth/thief do i join the dark brotherhood or the thieves guild? or can i join both or not? Like i said im a utter noob and still learning the game.

You can join both. Even the College of Winterhold and the Companions. Or join my guild of Kill skooma dealers on sight and chase butterfiles.

The only limit between guilds you can join is that you can't be in the Imperial Legion and Stormcloaks at the same time.

All the other guilds and such you can join at the same time as any race/build.

You can take any guild you like, it's not 1 guild only per Character. So pick what ever you like... And big time tip for RPG games, Read everything NPC's say this way you will learn alot about game (lore) and when you get specific quest you can learn about person you have to kill for instance, what is his weakness, where to find them and at what time.
