For myself? I keep the LMG with 400 rounds of surplus ammo, and an AMR with 36 of .50 BMG Match and 16 Incendiary ammo.

I also wear the stealth suit MK II...

This, along with a couple of frag grenades, was all my last character carried throughout the bigger part of the game. I did swap out the 10mm for the 12.7mm subgun once the silencer became available. But it's easy to run out of ammo with the 12.7mm so the nod goes to the 10mm.
