Another one of these ridiculous threads rears its ugly head again.
Before I address your point let me open up by saying good luck getting a refund on the PC edition of Skyrim!
The majority of us aren't complaining that the game is terrible as a whole (a few may be of that opinion but lets put them to one side for now). What we're doing is offering constructive critisicism because we care about the franchise. We've acknowledged the areas in which the game succeeds, doubly so by spending 60+ hours on it, but also acknowledge the areas in which the game needs work. This is actually usefull to Bethesda as we function as a free extension of their testing and QA department, and point out bugs and issues that a team of employees would be hard pressed to find in a game this size. The game is not perfect, it has a myriad of bugs, and the majority of people who are complaining do so because they want to experience the content as it was intended to be experienced as opposed to broken questlines, purple dragons and crash to desktops.
It is largely because of such a dedicated fanbase that the Elder Scrolls series continues to shine, a fanbase that isn't afraid to voice and act on their opinions. Rather than complacently acknowledging the bugs and imperfections we seek to form a solution, either through voicing our opinions to Bethesda or modding and fixing the game amongst ourselves, freely sharing our hard work amongst other members of the community.
As for the people writing Skyrim off as a total disaster, there is nothing anyone can do for them. They've gone one better on you and given up completely. This does NOT constitute constructive criticism, and the subsequent "lol skyrim is bad I use it as a drinks coaster" threads offer nothing more than a distraction for an idle moderator with too much time on their hands.
TL;DR Sure, people could follow your overall train of thought through to its inevitable conclusion - stagnating, growing gills and crawling backwards into the ocean. Or, they could grow a pair and realise that only through aspiring to, working towards and ultimately recieving a better quality of service that gaming will continue to grow in the right direction.
