But yes, i do that other than with special weapons/armor or modded weapons and armor

There is a perk in the light armor skill tree that gives bonus to matching armor, so obviously in that respect its the go. I don't care much for heavy armor.
With weapons, my character just grabs or makes whatever he can at the time with only one focus - inflict as much damage to hostile AI in as short a time as possible before he dies!
Apart from that, aesthetics don't mean anything to my character. Its the combat and skill experiences that matter as far as I'm concerned.
I have a character named Aria the Dwemer that wields Dawnbreaker, but Dawnbreaker is the only non-Dwemer Weapon that matches a character in Dwarven Armor.
I use Nord Hero Weapons because they do fit Steel Plate, and I have had characters nearly die getting the two Nord Hero Weapons available without having joined the Companions, and access to Skyforge.
I consider Draugr Weapons to be a close enough of a match to Steel Plate to use, but Draugr Weapons are lower tier equipment.
I use armor and weapon mods... so rarely do I seem to end up with a "matching set" However I usually leave orc weapons to my orc characters, forsworn weapons to my forsworn characters and so on.
I like matching armour sets, but I don't mind mismatched weapons.
both have the same color and base property (Steel), also, the weapons do not really have a pattern of any sort so the only thing that really matters to "match" them would be the color.

Well I don't go so far as to consciously match my armor with my weapons, but I match my armor pieces. If I say, smith Elven armor though, I'll probably make some blades or a bow to go with it.
M'aiq only uses armor that matches each other. He does not care for weapons though.
