Looking at the timeline leading up to Skyrim, it would appear that what's left of Morrowind is ruled by argonians now, as Etherealshadow alluded. So the lore appropriate thing might be to have an argonian farmstead somewhere with dunmer slaves. I would be very amused.
Dunmer weren't the only race who kept slaves, historically. The bretons of High Rock are descendants of nord slaves to altmer and have a mixture of both bloods in their veins. It might be more correct to suggest that dunmer inherited their penchant for slavery from their chimer ancestors, and the chimer from their altmer cousins. Or maybe they had it at some points in their history and not others. Its not really clearly stated.
As for nords being honorable and idealistic, I don't think I've seen anything anywhere to suggest that nords are inherently more moral than other societies. The vibe off them is that they do prize individual freedom, but they also might value strength more highly, as in 'might makes right'. I agree that widespread ownership of personal slaves wouldn't fit my impression of nords, but Morrowind proved that the impression I got of dark elves in Arena and Daggerfall wasn't accurate either. :shrug:
Its been 200 years since Oblivion, and imperial influence has waned considerably in the time since. Some nords may have picked up slavery during that time.
From what Todd has said though, there's supposed to be some cultural variety, so maybe one of the nord clans will be more okay with slavery than the others. Or perhaps the nature of the civil war in Skyrim has made some type of slavery necessary. Prisoners of war might be forced to mine metals (to make weapons and armor) for their enemies as a form of war reparations, and that could be considered a form of slavery. All of that would fit with my impression of nords fine.
I think slavery adds an interesting dimension to the moral choices of characters, and so in that sense I'm for its inclusion. But I wouldn't be heartbroken if it weren't in the game, either.
