The two I use most are the Skeleton key and Azura's Star. The former wins because mage characters eventually stop needing a weapon recharged and can do all they need by casting spells. At that point they don't need to capture souls any more. Lockpicking is a pain, and the spells available always seem to be at least one level behind the locks I encounter, so all my characters use the Skeleton key all the time.
Third is a tie between a lot of the others, depending on the character's style. Goldbrand is a great sword, if you like swords, but you can self-enchant a better one. The Ring of Khajiiti is useful, but you can get the same enchantments on other items. And so on... Everything else can be substituted but the two above.
I suppose there's no substitute for the Oghma Infinium, but I don't really value it's benefits at all.
