I would most likely be some kind of Scribe if I lived in Skyrim.
Healer in a temple. Seems like a decent way to spend the life. Maybe a more freely practicing mage and healer. Maybe a travelling one, though then I'd have to train in some weapon and armor usage, something I wouldn't mind.
Skooma Dealer.
If not that, then maybe blacksmith.
A bard, most certainly for me. A battle bard.

My luck... miner or guard. The two jobs with lowest survivability to all but... courier.
I might go hunter or such. If stuck in a city, likely be a bodyguard/housecarl

Sandwich Shop Owner. Given that everyone in Skyrim seems to gnaw at huge hunks of bread in their spare time.
I would make sandwiches and sell them. My tariff would be written in Charcoal on an array of city shields above my 'shoppe' door held in place by a tasteful montage of dead Draugr Deathlords

I would be breaking even the first year and by Yr 3 would have a sandwich cart pulling up outside every mine and guards barracks in Skyrim each day at lunchtime.
I'd more then likely be a smith or a farm hand of some sort. I grew up on a farm and work in the automotive field currently.
Stable worker or, if I have magic, healer for animals.
One of those weirdo conjurers/necromancers living in a Nordic barrow. Doing questionable stuff.
between that and people who say "I don't like
Alchemist/healer, I have a background for that. Save up enough to buy my own shop or build it and pay other people to leave town and search out rare ingredients.
Of course if I can change my age to oh around 18 to 25, I wouldn't mind being a priestess of Mara.
I would probably spend my youth as a Vigilant of Stendarr, cleansing the world from the filthy daedra.
And then, since I would be a powerful warrior after a life of fighting against all kinds of abominations, I could spend my days teaching the worthy how to fight and attending an open library for the public. If running low on money, you can always collect some flowers and butterflies to make valuable potions, although I would live a simple life.
