I'd probably describe my current playthrough as an Imperial Battlemage, or something close to it.
I swap between One-Handed and Two-Handed swords, Heavy Armor, Smithing, Archery (to soften targets at a distance), Alteration (additional AR boost/Candlelight/Magelight/Transmute/Magic Resist), Destruction (still deciding on my favorite weapon of choice), and Block.
I use Alchemy but don't invest perks into it... more for healing potions and boosts-lite and for another method of generating cash (ingredients are free so the ROI is a no-brainer).
I agree about "specialist" characters. When I've played them, they do not last long. Either they get done what I had in mind for them, or, more often than not, I got bored with them. They level way too fast for my tastes
Currently playing a Nord vampire... dual wield destruction mage, with maces and 1h axes as backup. Smithing and enchanting are required to survive in my modded, high damage game. Sneak and speech are the only other skills that have perks, and the only other ones that are higher than about 40. No armor perks, no other magic schools, no archery, no alchemy.

Dragons / Dragon Priests / Harkon / Miraak / Ebony Warrior / Karstaag: damage base + 1200 per hit (no joke, these guys will roll you up and smoke you in a half a second flat).
